without even trying

The blog is a spiritual practice of sorts; because with it, I can intentionally go back through the moments of daily living, remember and savor them, and press on with gratitude.

Picking up the camera creates a feeling of expectation that there will be an image to record.  An image just for me, a moment that speaks to my heart as a woman, a child of God, a homemaker, or a mother.

Each time I download, edit, study, is an opportunity to say “thank you”.

If other people happen to read it, enjoy, relate and want to be friends; that’s the icing on the cake!

The kitchen is where I go when I want a safe place….cooking shows are what I watch when all of life seems painfully overwhelming.  Eating and drinking is something I never take for granted.  To eat food without discomfort in the mouth or stomach; what a reason to praise!  I love cooking and baking and serving.  (cleaning up, not so much; only because my kitchen NEVER stays clean, it’s too busy).

I made kuchen on Saturday morning (we were having a snow day).  It was a buttery yeast dough, pressed into a pie plate and left to rise.  Then, a sprinkling of fruit and a topping of sugar mixed with egg, cinnamon, and cream.  Baked in the oven, and eaten with whipped cream.

It was gone in no time at all.

I want to make it a few more times before I post a recipe because I made it according to the cookbook but want to tweak it a tad before I am satisfied.  Although, even as it was, it was super delicious and my husband said over and over that it was good (and he’s not a sweets type of guy).

“Mom, can I make one of those orange things that smell like pine?” asked Seth.

It took me a little bit of questioning before I figured out that he was thinking of pushing cloves into an orange, and it was so adorable and random that of course I right away said yes and jumped off the couch to find my jar of cloves.

The other funny thing Seth needed on Saturday was iced tea.  Nothing would make him happier than some iced tea….so I got out my Aunt Colleen’s recipe and made it.  I tend to think that cravings have a purpose and for the most part, should be satisfied.  He also requested that he drink it “from that white owl mug”.  As you wish, little prince.

And lest you think I spoil him, I did NOT let him stay home from school today even though he did his very best to try to convince me he was in agony with a stomach ache.

Sarah was asking her Dad all that snowy day if she could go outside with him as he plowed the driveway.  The next morning, bright and early, her wish came true!  It was adorable.

On Sunday, we traveled about an hour to take Seth, Caleb, and David to their first wrestling meet of the season.  On the way there, I told this long story about the unsatisfactory fiction book I had finished (it was mixed in with “pulitzer prize fiction” search on amazon!! and it was a piece of garbage!) UGH.  I told him the whole story very animately and how ridiculous it was and when I was done Sarah piped up from the back seat and asked if the name of it was If God is Good.

WHAAAAAAAAAAAT?

I am constantly thrown off kilter by my children.  How on EARTH would she think such a thing??

“Because I saw that book on the coffee table.”

“OH.  No, Sarah, THAT book is really really good.  The book I was talking about was called The Life we Bury.”

And I thought to myself, “She notices stuff I didn’t realize she noticed.  Nothing gets by her.”

So it was pretty funny that the chapter we read this morning was about two little girls who decide to make other people happy.

The housekeeper said it would make her happy if they left the kitchen so she could scrub the floor.

The Mama said she was already happy.  But they wanted to make her happier.  “Just keep being my good little girl and then I’ll be quite happy enough.”

The old Grandfather said he was happy just to see them come and visit; but this time they insisted on DOING something to MAKE him happy so they cheerfully decided to take him for a walk outdoors until…. he asked if they didn’t think they had walked enough?  He was so weary he went to bed and they tucked him into it.  “What was the best part of your day, Grandfather?”  “Getting into this nice warm bed, I’m very tired.” was his answer.  They THOUGHT he would say, “Being taken for a walk.”

Then, the sick neighbor didn’t become happy when they sang many many songs (until they were hoarse!) to her.  She was expecting the typical basket of food and not a never-ending repertoire of singing.

They give a bouquet of wildflowers to the hired man; later they find them in the compost heap.

They decide to give up trying.

But then they learn of a sick classmate and they made her happy by giving her a doll and a book.

WITHOUT EVEN TRYING.

My word of the year 2016 was COMPASSION and it especially pleased me to see this in Seth’s homework folder recently…..

“Your child is learning that people can show their compassion or others by saying something kind or doing something helpful.”

“Learning about how to show compassion for other people helps children take action on their feelings of empathy.”

I thought to myself, “what is the difference in *making people happy* and *showing compassion* and I think the answer is *the heart*”

Making people happy comes from ideas in your head.  It’s a job you decide to do.

Showing compassion is feeling empathy in your heart and THEN acting on that feeling.

However, it DOES make people happy when you feel empathy and compassion toward them and DO something to show you care.  How funny!

I think I’ll explain it better to the children later on today and see what they think.

I do know that Sarah was cold yesterday.  As I rubbed her little bare arms with my hands she said, “Your touches make me warm.”

That’s all it takes, and I was blessed by her sweet words.

Happy Monday!

“I’ve had enough.  I’m not going to make any more people happy.”
But we did, all the same, because the next day Miss Johnson told us that Martha, a girl in our class, wasn’t coming back to school for a long time.  She was very, very sick and had to stay in bed several months.  That night, before I went to sleep, I lay awake thinking about Martha, and then I decided to give her Bella, my most beautiful doll.  This was because I knew that Martha didn’t have any toys at all…..In the morning when I told Anna that I was going to give Martha my doll, she went to get her nicest story book.  And after school we went over to Martha’s house……My, oh, my how happy she was!
“When we were outside the door, I said to Anna, “Isn’t it funny, now we’ve made someone happy without even trying.”

preparations for Thanksgiving

Wow what a nice sunny day it is here in good ol’ *hometown* USA.  As soon as I got the kids to school and took my shower I made my way to the grocery store for thanksgiving groceries trip #1.  Trip #2 is tomorrow because my husband has the day off and he loves Costco.  (We’re getting the turkey at Costco…….)

And lest you think I was going to bring all the groceries inside the house myself:

So, for preparations today, I am slowly getting organized to make sure I have all the things I need for the dishes I will be preparing on Thursday.

A nice whole grain, nutritious, and flavorful salad~

First of all, you need to cook your wheat berries by combining 1 3/4 cups water with 1/2 cup rinsed soft white wheat berries and 1/4 teaspoon salt in a pan.  Bring to a rolling boil, reduce heat, cover and simmer for one hour or until tender.  Drain and set aside to cool.

((I used Bob’s Red Mill wheat berries, and this is the recipe on the back of the bag.))

Wheat Berry and White bean Salad

Salad:  1 cup cooked wheat berries
1 cup cooked white or navy beans (I used one whole 15oz can of white beans)
1/2 cup green onion, chopped (I used regular minced fresh onion)
1/2 cup celery, sliced
1/2 cup tomato, diced (if you’re still trying to use up summer’s bounty, you can increase tomato)

Vinaigrette:
1/2 cup olive oil
2 T. lemon or lime juice
2 T. white wine vinegar
2 T. chopped parsley
1 T. honey mustard (I used 1 T. honey plus a half teaspoon of mustard)
2 T. minced shallot (I omitted)
1/4 tsp. salt
1/4 tsp. pepper

Mix the vinaigrette by combining all the ingredients with a whisk or blender.  Add the salad ingredients and mix well.  Let chill several hours or overnight.

I’m not the only one who liked it; my sister in law asked for the recipe, & Rich liked it, too.
The four of us went to Sturbridge this afternoon to get coffee and visit the Yankee Candle seconds store.  It’s becoming a yearly trip for us and quite fun.  Fall weather is beginning here in New England, the air is clear and hot during the day,  chilling down at night.  We also visited a few other quaint shops, too.

Now we are home.  Isaac and Cassandra left and Rich and I are reading on the porch.  I’m wearing soft wool socks which feel extra comfy after a day in flip flops, a pair of sweat pants, and a gray shirt.  Hair up in a ponytail/bun.

Caleb is frying hamburgers for himself and the kids– and I can smell them through the open window.  The neighbor boys just left with hamburgers in their hands.

There is a cool breeze and over in another chair is our cat busy giving himself a groom.

Rich is reading a book about Revelation.  Our arms are touching.

I heard an owl hooting!  Every few seconds it does it again, it’s off in the distance in the woods and I wish I could see it.  There are quite a few birds in the garden taking seeds from the hanging sunflowers.  I wish owls liked sunflowers seeds.

I should go get my camera and take pictures of the birds.

Sarah Joy had a check up yesterday with her surgeon.  I hate to admit this but I did bribe her to be nice to the poor doctor.  Ever since her first surgery, Sarah has had a very negative reaction to all the nurses and doctors.  Dr. K, her main surgeon, has been so polite, kind, sweet, and loving to Sarah every step of the way and has felt Sarah’s dislike keenly, although she completely understood and did her best to reduce contact with her, keeping her conversations directed toward me and Rich instead.  I bought Dr. K a necklace and had it wrapped up very prettily, with a bow.  I gently explained to Sarah that she was going to bestow this lovely gift to her doctor with a smile and a hug, “OR ELSE YOU ARE GETTING NOTHING FROM THE GIFT SHOP after your appointment!!”  “WHY do I have to give her a hug?” she cried.  “Because it will be good for YOUR HEART to be kind!” I said, wisely, with a prayer that this would work.

Success!  What a joy!  She was more relaxed and talkative to the Doctor than she has ever been.  She made Dr. K so happy with the necklace, but most especially with the smiles and conversation and hug.

Sarah was told that she was healing very well and could now do anything she wanted to do, as long as it was okay with her parents. We were given lollipops and then went skipping down the hall to the gift shop, where Sarah happily chose a 1.99 bracelet as a reward for her good attitude.  The brothers were with us, too.  Caleb chose Jolly Ranchers (making me remember an old xanga friend), and Seth chose a stuffed animal.

When we got home, the only thing Sarah wanted to do with her renewed freedom  was go wild-berry picking with her Mama.  We walked up to the raspberry patch and picked big beautiful jewels of berries.  When we came back home to put on bug spray, she saw that Seth had turned on a movie and decided to take a rest from berry picking because she wanted to watch the movie, too.  (It was “Home”).  I went in my room to relax and when her movie was over she came in, looked into my eyes, and said, “Are you ready for a berry-walk?  Or do you still need to rest?”  I looked at her and thought, “I’m not the one who just had surgery.  If you don’t need any more rest, I don’t either.”

Off we went to pick BLUEBERRIES this time!  The bushes in the woods are small, and low to the ground–nothing like my parent’s property covered in nice tall, fat and mature bushes.  But we found “just enough” berries and the sun was at the golden hour…..making everything glow like magic.  We found blueberries of all shades.

This morning I woke up to my daughter right in front of my face, telling me it was time to wake up and make muffins.  My mind was willing but my body felt leaden.  I tossed and turned for a few minutes and then got out of the covers, not so much to make muffins, but because I was curious about how my monarch caterpillars were…….

I found Sarah waiting for me on the little couch and I kissed her face.  Together we went into the kitchen to make the muffins she naturally knew we just had to use the berries in.

I filled the regular sized muffin tin and soon they were baking in the oven and we called up the boys to have their breakfast.

I ate a warm buttered muffin with a cup of coffee, perched on a stool in front of the aquarium which held a dangling caterpillar, two chrysalises, and a caterpillar.

I knew this caterpillar was very close to shedding it’s skin so I determined to wait and get it on video.

These two attached to a stick that I put in the aquarium.  They were the compliant caterpillars, the other one was a rebel and escaped the whole set-up to attach to a iPhone charging cord.

When I saw what it had done, I draped the cord over the top of the tank.  (I had blocked half the top with a cutting board.)

I sat for a while watching the dangling caterpillar gently convulse.  I knew it was almost time and called the children over.  We were able to get the whole process on video.

As I sat, I couldn’t help but think about how astonishing God’s creation is.  Why did he make these detailed, intricate creatures, and millions more beside?  He is The Creator–Creators MUST CREATE.  Just think of the things humans make and how we get “in the zone” as we sing, or draw,or sew, or garden.  That urge to create came from Father-God, we are like Him, in a very small way, because He made us in His image.  It is good and we enjoy it all.

So God created humans in his image. In the image of God he created them. He created them male and female.  Genesis 1:27

He brought the most mind-boggling things into existence—plants, humans, animals, all of these things reproduce and continue the cycle of life.  Self-sustaining creation.  A-MAZE-ING.  Overwhelming.  No one is like Him, but we have a touch of the divine within us, allowing us to enjoy life, and all parts of living.

We went strawberry picking in a quiet open field.  There was a nice lady just down the row from us who was friendly and spoke like she had known us forever.  From the race of Joseph, I feel sure.

They were 29 dollars and 15 cents for 11.2 pounds.

The air was hot and fresh.  The sky was blue.

I remember standing at Grandma’s kitchen counter when she made a fruit pizza (it was the first time I had it).  I don’t know why I had to make one today but I did, I had to.

Seth seemed to hang in the air as he leapt from the dock into the warm pond.  The boys were happy and carefree.  Everyone is getting browner from the sunshine but Michael’s nose is sun burnt and red.

Seth found a beautiful insect.

David had a friend over and there was a feeling of celebration as it was the first day of summer and the house was full of people we loved.

Perhaps that is why I felt the impulse to make the fruit pizza?

All thirteen of us, at four o’clock in the afternoon, had a little summer day pizza party.

The moms sat and chatted at the table while the kids all ran off to play games and swim.

David’s chicken lo mein

David’s food dreams came true a few weeks ago when I made a big batch of chicken lo mein, using a new recipe.  I made enough so that there were plenty of leftovers and he was able to freely get a bowl whenever he was hungry.  But that was a few weeks ago, and recently the craving for more chicken lo mein started up again.

Last night while Rich and I were at Caleb’s little league game, David called me and asked if he could make *the chicken lo mein that he was craving* and I said “yes”.

Then he called back and said there was no soy sauce.  He was hungry so we gave up on that idea and he had soup instead.  On the way home from the game I went to the store and bought the soy sauce and three packages of chicken thighs.

We started making the recipe at around 10:00 this morning.  He cut up the chicken.  I cut up the veggies.  He made the sauce, I stir-fried the chicken.  It was a fun recipe to accomplish with a partner.

Soon it was complete, and David filled up a yellow fiesta bowl with the steamy goodness.

And I enjoyed a bowl of it outside on the porch.

David and I enjoy each other’s company by making food in the kitchen.  (yesterday he made funnel cakes).  Jacob and I bond while grocery shopping.  Grace and I bond while singing.  And so it goes.  I have seven children and each one has a special way of broadening my world.  We can spend time together doing what they like to do best and it’s never forced.  We don’t have to try hard to spend time together, we just do what we would do normally…..together.

Chicken Lo Mein

2 boxes angel hair pasta
2 Tablespoons sesame oil
2/3 cup chicken broth
2/3 cup soy sauce (low sodium)
1 T. cornstarch
1/4 tsp. pepper
2-4 T. vegetable oil
4 cloves garlic, pressed
12 chicken breast halves, boneless, skinless, and cut into thin strips (we prefer thighs)
5 cups thinly shredded cabbage
4 carrots, coarsely shredded
3 cups sliced fresh mushrooms
1/2 cup chopped broccoli
1 medium onion, chopped

Cook pasta according to package directions.  Transfer pasta to a large bowl; add sesame oil and toss until coated.  In a small bowl, stir together the broth, soy sauce, cornstarch, and pepper; set aside.

In a skillet or wok, heat oil over medium-high heat.  Add garlic and stir-fry for 30 seconds.

Add chicken strips and stir-fry about 3 minutes or until no longer pink; remove from wok or skillet and cover to keep warm.  (I did the chicken in three batches because the pan wasn’t big enough.)

Add cabbage, carrots, mushrooms, and onions to the wok or skillet and continue to stir-fry another 3 minutes.  Add broth mixture to the skillet.  Stir-fry, mixing well, for 2 minutes more.  Return chicken and garlic to the skillet and heat through.  Add to bowl of pasta and toss together.

Serves 12

AND NOW I finally get a chance to tippety tap a blog post, a very long blog post.

Did you notice in the first photo how my cobalt canister broke it’s lid so it sweet talked the sunflower canister to give it it’s lid?  Now the poor sunflower canister has to use a pot lid.

After years of having a subscription to Country Living I let it run out and now get Cooks Illustrated, which I love reading through.  It’s a cooking magazine for readers, as most of the magazine is very long explanations of recipes and THEN the recipe.  And I also used the Better Homes and Gardens cookbook again, this time to make potato bread.

I did not realize I would end up with so much bread.  we ate it for days.  Buns for sloppy joe (sprinkled with herbs) and several loaves.  The potato in the bread kept it soft.

Star Wars the newest movie became available to purchase on amazon prime so we decided to buy it and eat all the junk food we wanted.  (we were sad because Rich had left for a 10 day business trip).

Grace felt hesitant and guilty about the groceries and the boys were all like, “stop it.”

The Ben and Jerrys was for meeeeeeeeeee.

Sarah made me laugh and laugh because she told me she wanted me to fix her hair “just like Tessa’s” which (she directed me) was a ponytail with a big chunk pulled out of the side.   She also had a hair band doubled around her wrist “just like Tessa” but I said, “Tessa doesn’t put hairbands on her wrist so tight her hand turns purple” and made her undouble it.  Tessa is all the rage in Sarah’s opinion.   I should tell her that Tessa would NEVER suck HER finger.

My very favorite way to eat my morning eggs!  I found an old bag of frozen raw shrimp from Costco which had been in the deep freeze for like a year.  So I thought I would throw a handful in the pan along with some peppers (also bagged frozen).  When the shrimp and peppers were cooked I put them on a plate and then scrambled three eggs and ate it all together while closing my eyes and saying “this is SO good!”  Jacob cooks his eggs at the same time.  It’s fun to be together.

I saved The Best for last…….Rich arrived back home yesterday and as soon as he came in the door he had three of his sons in a big hug.

The other day I was in Goodwill and I found & purchased a 1982 hardback copy of Better Homes and Gardens New Cook Book .  Since I was hungering for a cake I set to work that very day, using both a cake and a frosting recipe from the new-to-me cookbook.  When the cake was complete and I tried a piece, I had to admit that it was amazing.  Not to mention the frosting recipe calls for an egg instead of milk.  This was a huge revelation to me (remember, I am determined to use eggs in every way I can because I have a flock of pampered, well cared for hens which give me almost 2 dozen a day).  If you’re local and want to buy eggs from me, they are 3 dollars a dozen.  I have NO QUALMS whatsoever about using a raw egg in frosting because the eggs I use couldn’t be any fresher……..

This is a plain and simple yellow cake and I can’t even tell you how much better a homemade cake is over a mix.  I am not a professional pastry chef like my dear cousin but I have eaten her cakes and have 20 years of baking experience as a susie-homemaker in the kitchen so trust me.  A homemade cake is the way to go.  (using a mix is not an unforgivable offense, however)  If you do use a mix, at least make homemade icing for the top.

Yellow Cake

2 3/4 cups all purpose flour
2 1/2 teaspoons baking powder
1 teaspoon salt
1/2 cup softened unsalted butter (If you only have salted, then omit salt in recipe)
1 3/4 cups sugar
1 1/2 teaspoons vanilla
2 eggs
1 1/4 cups milk

Grease a 9 by 13 cake pan.  Combine flour, baking powder, and salt.  Beat butter about 30 seconds.  Add sugar and vanilla; beat till well combined.  Add eggs, one at a time, beating 1 minute after each.  Add dry ingredients and milk alternately to beaten mixture, beating after each addition.  Pour and scrape into prepared cake pan.  Bake in a 375 oven for 30-35 minutes or till done.  Cool before frosting.

NOTE: if you want a layer cake, bake in two greased and floured 8 or 9 inch round pans.  I usually keep the cake in the pan to frost and serve.

Creamy Butter Frosting

6 Tablespoons unsalted butter, softened
4 1/2 to 4 3/4 cups sifted powdered sugar
1 egg
1 1/2 teaspoons vanilla

In a small mixer bowl beat butter till light and fluffy.  Gradually add about half of the powdered sugar, beating well.  Beat in the egg and the vanilla.  Gradually beat in remaining powdered sugar, then additional milk if needed to make frosting of spreading consistency (I like mine as a soft-spread).

NOTE: this cake must be stored in the fridge because of the raw egg.

ANOTHER NOTE:  Thank Goodness my mom taught me a trick if I ever ran out of powdered sugar (which I did for this recipe!)  She told me I could make my own powdered sugar by pouring a couple cups of regular granulated sugar into my vitamix mixer and blending!  It was fun and kind of like magic.  Thanks, Mom!

We have been eating this cake for a week and it still tastes as good, if not better, than the day I made it.
