busy kitchen, happy hearts

Good morning, dear friends and relations, it is a beautiful fall day.  The official first day of winter is in one week and it currently does not feel a bit like winter.  Caleb, my precious soft hearted boy, had tears in his eyes this morning as he looked at the weather report for the days leading up to Christmas.  NO SNOW.  He said he prayed about it, too.  He wonders if we will have ANY snow AT ALL this winter.  It’s so important to him that it makes me long for snow, too.  What a happy boy I will have on that day.

I went down to the chicken coop to let out the hens and give them a bowl of leftovers.  I collected three eggs and stood at the pond to look at the beauty around me as I prayed a good morning prayer to God, asking him to send down his blessings on this old world, thanking Him for all He enables us to do each day….learn, grow, think, laugh, praise, heal, feel, work, BE…new creations.  The old has passed away and the new has come like a miracle.  Every good thing comes from above and our thankful hearts please Him.

The birds are happy, too.  I have a feeder by the porch which brings in the songbirds.  They sit in the bushes by the house and take turns flying over to select a seed.

I opened windows and turned on the house fan for some fresh air.  Later on I will go the post office to get a Christmas card weighed because I bought a pack that require extra postage, but how much extra?  I need to figure it out and get to work writing my cards, which I do so love to do, sending out mail is a pleasure.  Receiving it is, too!

How about one last post featuring dear Hannah?  Oh, we had a lovely visit, doing so many simple sweet things together like sing and play piano, put together puzzles, watch TV, go for walks, and……..WORK IN THE KITCHEN.  How fun it is to work side by side with another woman in the kitchen!  Four hands are better than two.  And we were blessed with two little helpers….eight hands ready to work in the busy kitchen.

While Hannah set to work making her famous chicken noodle soup with homemade noodles, I began a batch of Christmas cookies….Russian tea cakes.  I only regret that I didn’t think of sending a box home with her because they are a very sturdy and delicious cookie indeed, able to survive a trip to Alaska.

She rolled the dough as thin as possible and then cut the noodles on a cutting board.

Then, she sprinkled them on a floured cookie sheet to dry for a little while.

I put Seth and Sarah to work rolling balls of cookie dough.  “Is this one too big Mom?” she asked.  “Yes, a little.”  “Okay,” she said as she solved the problem by taking a chunk off to put it in her mouth.

The cookies are done and powdered sugar (which Sarah called flour over and over regardless of my corrections) was everywhere — reminding us of Caleb’s elusive snow.

I left Hannah briefly in order to pick up my teenagers from High School and take a few of their friends home.  When we returned, dinner was done.  She made fresh and creamy mashed potatoes for us to pour the soup over.  Every bit of this meal was homemade and it was so delicious that even though I was filled up by my first helping, I knew it would be a crime not to enjoy a second helping.  So I did.

But that wasn’t the end of Hannah’s work in the kitchen that night.  As soon as she was done with the chicken, she began a batch of overnight cinnamon rolls.

Once again, I helped myself to several cinnamon rolls too many just for the sake of taking advantage of the freshness, the homemadeness, and the lovingness of Hannah’s baking.  Although she mourned what she considered *a shade too brown of a bottom*, let me assure you THEY WERE PERFECTION.

After our cinnamon roll breakfast, we took David, Caleb, Seth, and Sarah to the movies.  But before we did, we attempted a “frameworthy” photo of the two of us.  Forever friends.

That night, Hannah helped us decorate our Christmas tree.  Tomorrow I will share the family photos she took of Rich and I with the kids.  But this next one was one that I had Grace take of the two of us holding books that we bonded over.  I first believed Hannah was a possible kindred spirit because she mentioned on her old xanga blog that she was reading the James Herriot books which I absolutely LOVE.  Then, later on, once we became pen pals and got to know each other better, we read several LM Montgomery books together, including Pat of Silver Bush.

Last night’s dinner was exceptionally miraculous so I thought I better share.  I use the word miraculous because even though the dish had tomatoes in it, all seven children still ate it with vigor and healthy appetites.  They had nothing but good things to say.

Homemade macaroni and cheese is rather like a circus performance.  You have the macaroni that needs to be boiled in salted water for exactly 6 minutes, then you need to find your colander and drain it, all the while stirring the butter, flour, and milk base for the cheese sauce so it doesn’t burn to the bottom of the pan.  Cheese must be found in the fridge and grated, six cups.  Canned diced tomatoes from the pantry, a can opener, whisk, rubber spatula, wooden spoons, measuring cups and so on…. it’s non stop action until the oven door slams shut, your arms go up in victory, and the baking begins.

IT WAS UTTERLY WORTH IT.

(This is Shanda’s blog so do I have to mention all seven kids running back and forth throughout the kitchen during the juggling act?  Every time Dave came near me to tell me something I said, “stir the sauce!”, he was honestly offended by it.)

It would be a crime NOT to have chickens on this property.  Every morning, I let them out of their coop and the entire flock spends the day making rounds to all their favorite places; the pond, the nice dry leaves under the trees, soft dirt in order to take dust baths, under the wild berry bushes, the bank behind the house.

Whenever the urge to lay an egg happens to a hen, she makes her way back to the coop for a nesting box or the garbage barrel.  Sometimes there are a few eggs in the box when a chicken arrives, and I find them kicked out later on…..at least I imagine that must be how they end up on the floor amongst the wood shavings?

The day after playdates always leaves Parker and me kinda tired.  So we took naps on the couch yesterday when everyone was back to school.  (they had the day off on Wednesday).

So, what to do with all those delightful eggs?  The #1 thing to do is make a big batch of brownies.

2 cups vegetable oil
3 1/2 cups sugar
4 tsp vanilla
8 eggs
2 cups flour
1 1/3 cup cocoa
1 tsp baking powder
1/2 tsp salt

Blend oil, sugar and vanilla, then add eggs and mix well.  Add dry ingredients and mix thoroughly.  Pour into a greased 11 by 13 inch pan and bake at 350 for 25-30 minutes.  All brownies are best slightly under baked.

I first fell in love with Liberty Fabrics after seeing the blog Posie Gets Cozy.  The lady on that blog (Alicia) has made so many beautiful things with that fabric line and I only dreamed of doing the same.  Alas, that dream has still not come to fruition, because I did not MAKE Sarah’s little blouse, I bought it on super-duper clearance and I was so happy to do so!

It’s thin and light and perfect for her because she gets too hot at school sometimes.  It makes a nice layering piece and it’s so pretty.

Grace and Ethan are home sick today and Jacob doesn’t have school.

I woke up feeling optimistic and cheerful for the first time in a long time, praise the Lord!

We watched a little bit of the movie “Newsies” and a little bit of a Harry Potter movie.

I love seeing all the books within the Harry Potter movies….today it made me want to go to the library.

So I did!  After I made my three oldest (who are now 16, 17, and 18 years old) a batch of pancakes and fried eggs, that is.

I paid a typical five dollar fine at the library and left with a nice heavy bag of books.

Then I hopped in my car and drove to the thrifty thrift shop downtown.

It’s gorgeous weather this week, by the way.  Today is balmy.

(Ethan just told me he wanted meat.  Jacob is starting a hamburger for him.  Grace is sleeping.)

I’ve been amused by a couple of Kingfishers.  They’ve been so noisy that I wonder if they’re battling over territory?

There is typically a sense of expectation during every walk outdoors.  But the other evening it was almost completely dark so I wasn’t too expectant about seeing anything (at all).  I went outside to shut in the chickens and the night was so warm and soothing that I took a short walk around.  I stood down by the stream to listen to it and happened to look UP….right at this bird’s nest, which I could barely make out.  I turned on my flashlight to see it and the next day I took my camera down.  So small and sweet that I laughed.  Even in the dark God can show us things.

About those beans.

It’s true.

I’ve made a project of baked beans and we are all suffering for it.

Yesterday the kids were sitting at the counter eating breakfast when Seth let one fly.

“Seth, you’re STINKY” Sarah said.  He was highly offensive, and highly offended by her insult.

Later on that morning I myself was unfortunately sitting next to Seth, we were reading together, and he let another one fly.

The smell….was terrible.  I had to fan the air before my nose while listening to his reading.

It was at that moment that I realized that our bean day HAD to be on Fridays to save the world.  It’s all well and fine for me, I have no place to go, but my husband and my children have to be out there in the public all day long.  I must save the public and protect the innocent.

About Rich.  The morning after our bean dinner he was busy getting dressed for work when he woke me up with loud melodious toots.  I began the day shaking the bed with laughter…..it was a wonderful way to wake up….me laughing and him making sarcastic remarks about beans.

I went through all my cookbooks and photocopied every baked bean recipe I could find.

“Best Baked beans EVER” (this is the only recipe I took which uses already cooked and canned beans, but it contains a grated raw potato and a bake for 2 hours, which fascinated me)

and lastly, another “Baked Beans” (Tasha Tudor recipe, the only one with crumbled sausage in it.)

I put all the recipes in a folder.

You have to sort the beans just in case something besides a perfect dried bean got in the bag…I’ve only found one stone so far…you also pick out any bad beans.

It takes a very long time to bake beans and I can understand why many years ago it was the housewife’s dinner of choice on washing days.  You can simply put the bean pot on the fire with minimal fuss and let them bake all deliciously sweet, caramelized, and soft.  I also learned that the Puritan women would put them to baking on Saturday night so that they could be eaten on Sunday without breaking their rule of “no working on Sunday.”

I told my Mom about my project and she approved of it.  She wrote to me, “Dad’s Grandma W made Great Northern baked beans with white sugar very plain, with salt pork on top, and your dad liked them.  Uncle Arthur grew the beans.  They ate them with macaroni and cheese.  Dad wishes he had the recipe.  I remember having the beans after we were married, when Uncle Arthur came to Grandma and Grandpa B’s house for the winter months.  Grandma W also lived there, but she died a few weeks after you were born.  I think I’ve been trying to make them like that taste memory all these years.”

The next day I make a sandwich for lunch with leftover beans.  I toast some rye bread and add a thick layer of reheated baked beans, plus a drizzle of molasses.

Seth caught two tiny fish, and by tiny I mean approximately one centimeter and as thin as a wire.  One for him and one for his sister.  Sarah’s face says “oh, it’s so cute!!!” –painfully cute.  She loves babies.

Good morning my friends.  Today is Monday.  It’s sunny outside and I just got home from taking my oldest daughter to her babysitting job.

My babies are six and five years old and are currently watching “The Boxcar Children” on netflix.  The rabbit is in the living room in her cage and Parker the dog is staring at the children as they eat breakfast…bread and cheese, blueberries and milk.  A breakfast inspired by their favorite story.

We finished reading the book on Saturday.

I took three pages of notes at Bible study on Thursday, given by a dear older woman of faith who recently lost her beloved grown daughter.  Her heart spoke and filled my own heart and soul so that the tears flowed…..I read over her words in my journal and find so much truth and so much Jesus in them.

I thank God for her, please pray for His grace to continue to fill her as she grieves.

With her reminder, I kept an open heart and said “yes” to my husband more than usual this weekend.

Those were two times I would have typically said “no”.  Costco is too far for fruit.  I’m too tired and just woke up and am not hungry enough for breakfast just yet.

Putting aside the excuses and selfishness meant more fun and closeness with this man of mine.

We went to the diner two times this weekend.  These are the times I will always remember.  When the children are grown and gone and we go to the diner again we will think of them always.  The laughter, teasing, spills, eyes too big for the tummies.

The chicks have turned into chickens.

We spent several hours outside on the lawn Saturday afternoon.  With blankets, books, and towels we rested in the glorious sun…Rich and I…and whatever children came along.

Samantha-Cat caught a frog.  I held it in my hand & it’s little body pressed anxiously into my palm.  I checked it all over and there were no mortal wounds — so back into the pond it went.

The pretty-pretty beans are close to producing.  I’ve finally found little white flowers in the vines.  We’ve been eating peas and watching the watermelon grow bigger every day.  Tomatoes are beginning to ripen and sunflowers growing tall.

As soon as the sunflower was done blooming a smart goldfinch began eating the seeds from it.  I took a picture of it through the kitchen window this morning, through glass and screen.

Made a blueberry/blackberry coffee cake, Grandma’s recipe:

1/2 cup shortening
3/4 cup sugar
1 egg
2 cups flour
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
2 cups blueberries

Preheat oven to 350.  In a mixing bowl shortening and sugar together, add egg and beat until fluffy.  Mix in the dry ingredients alternating with the milk.  Spread in a greased and floured 11 by 7 inch pan or two 9 inch pans.  Sprinkle the top with 2 cups of blueberries.

Crumb topping:

1/2 cup sugar
1/2 cup flour
1/2 teaspoon cinnamon
1/4 cup butter

Mix together with a pastry blender or a fork until crumbly and sprinkle on top of the berries.  Bake for 30-45 minutes until a toothpick comes out clean.

waffle summer

I love making breakfast for the children.  The best thing about summer vacation is that the extra time we have makes it possible to do so.  I’ve been making waffles.

I suppose it has something to do with the moment a few weeks back when my Mom and I were organizing my pantry and we discovered that one of the boys had put my waffle maker back with waffle stuck all over it.  It was shocking. I remembered the day years ago that Rich bought me that wonderful waffle maker from Williams and Sonoma.  I was so proud of it, but had forgotten how much I enjoyed it.  I immediately felt like nurturing my waffle maker again.  As soon as I had extra time again (days later), I took it outside and cleaned the crumbs out of it.  The dog was by my side, eating them out of the grass.  Waffle makers have the potential to be the filthiest appliance in the house if they aren’t perfectly cleaned after each use.  Even the cord itself was coated in old batter.  (I blame the boy who used it last.)

Of course once it was clean again I immediately wanted to use it.

This morning I made cornmeal waffles from a Bed and Breakfast cookbook.  Before I mixed them up, I thinly sliced 2 quarts of strawberries into a fiesta bowl and sugared them.  The kids could put strawberries on their waffles, maple syrup, or both.

Cornmeal Waffles
2 large eggs
1 3/4 cup milk
1 cup cornmeal
1/4 cup sugar
1 Tablespoon baking powder
1 teaspoon salt
6 Tablespoons melted butter

In a large bowl beat the eggs and add the milk.  In a separate bowl combine the dry ingredients and store into the egg mixture.  Gradually add the melted butter.  Spoon into a greased hot waffle iron, and bake.

Notes:  I use one of those silicone pastry brushes to grease my waffle maker.  Also, I added extra flour to this recipe because I like waffle batter to be thick.

When I made them, only Caleb, Seth, and Sarah were awake.  So all the rest are waiting in a 200 degree oven, waiting for the big kids to wake up and eat them.  Last week we had someone spending the night with the boys and he was so amazed that I had made waffles from scratch that he took a picture of the recipe.

Strange and Unusual Joy is a mark of a Christian.
A key to a content life is purposefully living the one God gave you and enjoying each part of it.
Continuous study and learning…having a curiosity about life and living….is another way to grow in grace.
If you believe in the blessedness of marriage, put extra time and effort into your own.
At some point in the very near future all the children of God will experience the best happy ending in History….and I just cannot wait!!!!

W H I T E    T U R K E Y   C H I L I

1 T. olive oil
1 small onion, chopped (about 1/3 cup)
2 cloves of garlic, smashed and chopped up fine
1 lb ground turkey
salt and pepper to taste
1 can cannelloni beans, drained
1 can corn, drained
1 16 ounce jar salsa (your choice)
1 15 ounce can tomatoes with garlic and onion (or add extra seasonings if you only have plain)

In a skillet, heat olive oil over medium-high heat.  Add onion and garlic and cook until translucent, add turkey and brown, salting and peppering to taste.  Add the rest of the ingredients and heat till bubbly and completely heated through.

I triple this for my family, so we can enjoy leftovers.  I use mild salsa, the guys pass around the Franks Red Hot.

This recipe is from a cookbook that has literally changed my life, Saving Dinner, by Leanne Ely.  It contains recipes for delicious main dishes for each week (6 days) of the year WITH the complete shopping list (!!!!).  It is organized by season.  All the recipes are as healthy as can be with typically a fish, beef, chicken, slow cooker recipe, meatless, casserole.  Each recipe includes side dish recommendations and nutritional content.    I don’t use the cookbook every week, but I’ve used it a lot over the last couple of years, (all spring this year so far except the 2 flu weeks).   This week I am making Chicken Parmesan with steamed broccoli, Mexican Lasagna with a salad, Beef and Spinach Pitas with baby carrots, Chicken Broccoli Soup with a salad and rolls,  Halibut Piccata with steamed broccoli, sweet potatoes, and baked potatoes, and lastly, Greens and Beans with a side of brown rice.  Buy it!  🙂

Glorious Easter!  The day all the world is reminded of the amazing hope we have, because of our Savior and Lord Jesus Christ dying on the cross and *not staying dead* but rising again the third day.  Up from the grave He arose!  And because He lives, I can face tomorrow.  Because He lives, I can also live forever and ever……. and someday soon, because life is short, I will see Him, and know Him, and be home.  Oh I can’t wait for that day….that “can’t wait” feeling is HOPE, glorious resurrection hope.  Thank you, Jesus.

I woke up this morning at 6 and found Jacob frying himself some eggs, Davy ready to chat with me, and Grace sick to her stomach but saying she was fine and going to school regardless. (She is way too responsible for her own good.)  I served cereal, started the dishwasher, started a load of laundry, folded three loads of it at the couch, drank coffee, made myself a couple of eggs and shared them with Seth, gathered up homework and bags for the elementary school boys, and sent five children off to school.

I’m still in my pj’s, feeling rather sleepy, I’m in bed with Miss Sarah.  We are under the down comforter and she’s snuggled up close enough so I can play with her hair, she’s sucking her finger and feeling the tag on her new stuffed animal.  It’s cozy with my little sunshine girl, listening to the washer and dryer hum.

I found this old snapshot of the kids, taken in our old neighborhood.  Caleb was a baby and not in the photo.  Grace is wearing her flower girl dress and Jake and E are dressed exactly the same, and standing exactly the same, too.  Little Davy has such a sweet smile on his face.  Isn’t it funny how a simple picture can make a person happy and sad at the same time?  I remember how Grace, at this age, used to hate getting sun in her eyes, and was very sensitive about outdoor photography, you can see it in her face in this picture, too.

They are growing up but Grace wore a white dress again this year.

Outside, we gathered up the family and I said, “come on let’s act like we love each other!” which prompted Seth to put his arm around me and melt against my leg……sweet, sweet love of a little son.

Grace Sarah Easter 15

We went to church….I can’t think of a better day to attend a church service….and then when we came back home we didn’t eat a ham dinner.

We ate pizza!

Here is a photo of all my children yesterday when we got back home.  I wouldn’t let them in the house until I took a picture of them all….my own offspring plus Jacob’s girlfriend Emily (red sweater), and Myriah (white jacket), a young family friend who lives in Virginia and came to visit us during her spring break.  She will be here all week.

I spent five dollars on the actual baskets from our local thrift store, and I put jelly bean filled eggs in each one, with a gift.  I accidentally bought two bags of very SOUR jelly beans but the children still liked them.  Seth had matchbox cars, David and Caleb had sticky bugs that they could shoot with their finger at the windows, Sarah had a stuffed animal, and the older teens each received a pair of new socks.  Simple, but enough to keep them all excited about the day.

We had my sister’s dog-baby all weekend, too.  His name is Lloyd and he is a labradoodle.  Isn’t he adorable?  Rich called him Rug and told me that Rug looked just like me what with the brown curls.  He was a lot of fun to have in the house with us, such a cute puppy.  David was the one in charge of him, while Uncle Jason and Aunt Amanda were away for Easter.  He is back home now and Seth asked me if we could please get a rug.

Emily had Easter dinner at her grandparent’s house and took Caleb with her (heart melts).  The rest of us made homemade pizza……

It was non-stop activity in the kitchen for a long time as I made a ton of pizza dough and the kids each made a pizza of their own.  Jacob was a slow perfectionist over his pizza, causing great amusement, but his hard work paid off because YUM YUM it was good.  Myriah made a pizza for the first time and did so good, it was amusing to see her press the dough around on the oily pan trying not to touch it with her long fingernails.  Grace made a pizza with salami as a topping and she used cookie cutters to make the salami pretty.  Seth made a crazy-shaped stuffed crust pizza that was thin on one side and thick on the other.  Ethan and David each chopped up their own fresh garlic and made clam pizzas.  It was awesome.

We cleaned up the kitchen and then watched a movie.  Some of the kids fell asleep and the rest of us went outside after the movie was done, to get some fresh air.  By the way, it snowed yesterday.  But spring is coming and there are signs of it everywhere, it’s just very late this year.
