black bottom muffins, etc.

The coffee shop on Jekyll Island sells these muffins and my Dad loves them.  I was determined to find a recipe because they are delicious.  Indeed, with the internet it didn’t take any longer than five seconds to discover what I was searching for….black bottom muffins….the name makes Sarah Joy giggle.  “Did you say bottom?” she laughed.

The muffin is more of a cupcake.  The chocolate cake part is soft and delicately sweet.  The middle is cheesecake!

I made a batch yesterday (one batch=12 muffins) and they were gone in no time.

1 (8 ounce) package cream cheese, softened
1 egg
1/3 cup white sugar
1/8 teaspoon salt
1 cup miniature semisweet chocolate chips
1 1/2 cups all-purpose flour
1 cup white sugar

1/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
1/3 cup vegetable oil
1 tablespoon cider vinegar
1 teaspoon vanilla extract
Directions
Preheat oven to 350 degrees F (175 degrees C). Line muffin tins with paper cups or lightly spray with non-stick cooking spray.
In a medium bowl, beat the cream cheese, egg, 1/3 cup sugar and 1/8 teaspoon salt until light and fluffy. Stir in the chocolate chips and set aside.
In a large bowl, mix together the flour, 1 cup sugar, cocoa, baking soda and 1/2 teaspoon salt. Make a well in the center and add the water, oil, vinegar and vanilla. Stir together until well blended. Fill muffin tins 1/3 full with the batter and top with a dollop of the cream cheese mixture.
Bake in preheated oven for 25 to 30 minutes.

You know what makes me sort of sad?  When I was married 20 years ago I spent so much time dreaming as I turned page after page in my new cookbooks, planning on what I would bake next for my husband.  I have a beautiful collection of books to this day….but do I look at them now?  Hardly ever.  I think one of my new year’s resolutions will be to make more recipes out of my cookbooks rather than from the computer.  Just because.

This is a Sarah update.

She had a doctor’s appointment on Tuesday with her surgeon and new urologist.  The surgeon was very happy with her healing progress.  She does have a stent which will have to be removed in February which will entail another magical sleep in the O.R.  At the same time, the Doctor will look with a scope into her kidney to make sure every stone fragment was removed during her first surgery.

The urologist went over her 24 hour urine sample results and sure enough, she is a stone-maker.  He sent us to get blood drawn that day as well, which Sarah did not appreciate despite the fact that they had a cartoon playing right in front of the lab chair and she was sitting on my lap.  She was just simply done with all the needles.  But we managed just fine and she came away with another toy so……

He called with the lab results which were PERFECTLY normal (praise Jesus) –all but her vitamin D level, which was low (common for our area).  So she is taking a supplement and I’m giving it to all the children in the house, too.

She has to eat an orange a day (and/or lemons, lemonade or limes) and drink twice as much as I was making her drink before.  (ugh) She also has to avoid salt.  In a few months we will do the urine test again to see if the diet change has helped.

Sarah went to school on Wednesday and Thursday.  She did absolutely fine other than being a little more tired than usual.  I kept her home today, however, because she was looking pale to me and although she has been acting fine here at home, I feel much better keeping her with me.  She is currently watching a movie.

Ethan is home after getting done with midterms early.  I went to pick him up (with Sarah) and we went through the Dunkin Donuts drive thru.  We stopped at the grocery store where I left them waiting for me in the warm car eating their snacks while I ran in to get half and half and the ingredients for three bean salad.

It’s a beautiful day, sunny, and a freezing cold 27 degrees with an icy wind.  When I look out the window at our ponds I think to myself that the ice must be about ready for skating.  In the meantime, I am staying close by the fire that I made this morning in our fireplace.  It is a comforting, popping and crackling sound, not to mention toasty warm.

Last night’s dinner was exceptionally miraculous so I thought I better share.  I use the word miraculous because even though the dish had tomatoes in it, all seven children still ate it with vigor and healthy appetites.  They had nothing but good things to say.

Homemade macaroni and cheese is rather like a circus performance.  You have the macaroni that needs to be boiled in salted water for exactly 6 minutes, then you need to find your colander and drain it, all the while stirring the butter, flour, and milk base for the cheese sauce so it doesn’t burn to the bottom of the pan.  Cheese must be found in the fridge and grated, six cups.  Canned diced tomatoes from the pantry, a can opener, whisk, rubber spatula, wooden spoons, measuring cups and so on…. it’s non stop action until the oven door slams shut, your arms go up in victory, and the baking begins.

IT WAS UTTERLY WORTH IT.

(This is Shanda’s blog so do I have to mention all seven kids running back and forth throughout the kitchen during the juggling act?  Every time Dave came near me to tell me something I said, “stir the sauce!”, he was honestly offended by it.)

It would be a crime NOT to have chickens on this property.  Every morning, I let them out of their coop and the entire flock spends the day making rounds to all their favorite places; the pond, the nice dry leaves under the trees, soft dirt in order to take dust baths, under the wild berry bushes, the bank behind the house.

Whenever the urge to lay an egg happens to a hen, she makes her way back to the coop for a nesting box or the garbage barrel.  Sometimes there are a few eggs in the box when a chicken arrives, and I find them kicked out later on…..at least I imagine that must be how they end up on the floor amongst the wood shavings?

The day after playdates always leaves Parker and me kinda tired.  So we took naps on the couch yesterday when everyone was back to school.  (they had the day off on Wednesday).

So, what to do with all those delightful eggs?  The #1 thing to do is make a big batch of brownies.

2 cups vegetable oil
3 1/2 cups sugar
4 tsp vanilla
8 eggs
2 cups flour
1 1/3 cup cocoa
1 tsp baking powder
1/2 tsp salt

Blend oil, sugar and vanilla, then add eggs and mix well.  Add dry ingredients and mix thoroughly.  Pour into a greased 11 by 13 inch pan and bake at 350 for 25-30 minutes.  All brownies are best slightly under baked.

I first fell in love with Liberty Fabrics after seeing the blog Posie Gets Cozy.  The lady on that blog (Alicia) has made so many beautiful things with that fabric line and I only dreamed of doing the same.  Alas, that dream has still not come to fruition, because I did not MAKE Sarah’s little blouse, I bought it on super-duper clearance and I was so happy to do so!

They didn’t know I was taking a picture with my phone.

Dave could not find his shoes and had to wear his Dad’s big white size 13s into the store.

We stopped at Barnes and Noble at about 7:30, on our long-long drive home from Georgia.

Rich and I lined them up on the curb so we could give instructions and information to everyone at once, rather than 6 times (forgetting the seventh, which is typical–SOMEONE gets missed!oops).

The instructions were:  1.  Everyone needed to use the bathroom.  2.  Everyone may pick out something to read.

The news was:  1.  We were driving all the way home without stopping at a hotel to sleep.

We arrived home early this morning at 4:30.

My favorite memory of traveling was at about 2 in the morning when they had taken little naps, gotten over the grumps, and had a second wind of cheer.  Singing to the radio, telling funny stories to classical music, watching a video.  At 2 a.m.!!  Such good little travelers.

Rich singing every hymn he could think of to himself while flying down the highway in the fast lane……me half enjoying it and half plugging my ears so I could concentrate on my new cheap paperback.  Hanging on and whispering prayers.

Rich, by the grace of God, is raising up some good young men.  This is our Ethan.  He loves Jesus, being active, sports.  He doesn’t talk much.  He can dance some cool moves.  He is confident, respectful, honest, and doesn’t take any slack from his younger siblings.  My favorite memories of Ethan from vacation are 1.  When he pulled himself up over a high wall to retrieve the volleyball we had hit way out of bounds.  and 2. When he walked out of McDonalds holding Seth’s hand on one side and Sarah’s on the other.  Be still my heart.

My mom loved vacationing with all of her children and grandchildren, but she was itching to get back to her garden.

I’m just like her.  My garden is much smaller but the first thing I did today after I woke up at 11am was go outside with my cup of coffee.

I knew where to find some treasures.  Some were obvious, like the bright red tomatoes.  But others, like the cucumbers and green beans, were hidden and had to be searched out.

For brunch I made a quiche.

chopped bacon fried with a section of minced onion and one green pepper

added to 8 beaten eggs, 1/2 cup sour cream, 1/2 cup milk

2/3 cup mozzarella cheese, 1/2 cup cheddar

1/4 tsp pepper, a few nice healthy grinds of salt from salt-grinder

all leaves from the two beets I harvested (can substitute 3 cups chopped lightly packed fresh spinach)

fresh basil, chopped (about 1/3 cup)

about 1/3 cup tomato

Bake in the oven for about 25 minutes or until set.

I served it with the rest of the garden tomato, mixed with salt, olive oil, onion, and basil.

I almost shrieked when Tessa told me school started this Thursday.  I thought I had one more solid week with the children.   My heart aches because Sarah Joy is going off for her first day of Kindergarten.  Mothers understand what I mean….I’m happy for her, I know she’s ready, but as a mom I feel that small sad-like feeling of letting go.  Rich read Seth and Sarah letters from their teachers, which were in the mailbox when we got home from vacation.  Their little faces were seriously listening to every word.  They have homework to do, and a meet and greet on Wednesday.  I don’t quite feel ready, but I’m thankful for this journey with my children and that little by little they grow up, not all at once.  Thankful for Jesus and for my husband making it easier.

On the fourth of July Rich took the kids to the playground so he could go running.  I made macaroni salad (amish recipe) and looked forward to grilling for dinner.

After they came home the boys wouldn’t let Seth on the trampoline and he was sad.  I was fine with it though because three boys on the trampoline is an accident waiting to happen.

When it was time to start the grill Rich said “oh shoot, I’m out of charcoal” and I almost threw away the meat.  He went to the store and eventually we did eat our grilled beef kabobs, baked beans, macaroni salad, cantaloupe, and spice cake.

At our church those who are taking communion file up to the front to take the bread and then the cup, then going back to their seats to partake.  Those who don’t take it are left in the pew to try to work their positions in order to be the one sitting next to MOM when she returns……the boys were silent but determined and my communion cup was jostled so that most of it dumped on my chest and lap.   I just had to laugh because I know God understands how hard it is for me to stay focused in church these days, and He wants me to cherish the moments.  I was in constant thoughts with God, and knew He was enjoying my situation just as much as I was.  Rich took the picture after we had gotten back home.

On Sunday I had such fun taking them out to Starbucks.

I let them each pick one item as a gift from me to them.  Abbie chose purple mascara.  “Do you think my Mom will let me wear it?”  “Well, if not you could at least wear it at home!” And Grace picked out a new eye-liner pencil.  I treated myself to a new lipstick.

Later that night they made lemon cupcakes and served me in bed while I was reading my latest book, Cold Mountain.  Rich had one as well, as he read a book by Bill Piper (John Piper’s dad).

To be honest, I made Rich go out to the kitchen to get me a second one.  They were so good!

2/3 cup shortening
1 cup sugar
3 eggs
1 2/3 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup milk
1 Tablespoon grated lemon peel

In a large bowl, cream shortening and sugar until light and fluffy.  Add eggs, one at a time, beating well after each addition.  Combine the flour, baking powder and salt; add to the creamed mixture alternately with milk, beating well after each addition.  Stir in lemon peel.

Bake in muffin cups at 350 for 20-24 minutes, and frost.

 

Rich woke me up at 2 in the morning yelling at the teenagers to go to bed.  The girls were running up and down the stairs and the boys were playing video games.  After which we had insomnia for over an hour.  We tossed and turned.  Ugh.

He’s at work now and I’m showered and dressed.  I’m leaving here in about an hour to take the kids to the one dollar movie at the mall.

I don’t want to end this post without sharing a sweet compliment that my husband gave me.  We were snuggling close in bed when he said, “Shan, I don’t ever remember a time in all the years we’ve been married that you’ve smelled bad.”

I made a new recipe last night from the Saving Dinner cookbook and it was really good.

I doubled the recipe and we ate one whole meatloaf, plus a quarter of the 2nd.  The boiled potatoes weren’t a big hit but I will be making a small batch of Aunt Colleen’s fabulous potato salad with the leftovers.  I peeled and sliced dark orange organic carrots for a side dish, too.

M A K E   M I N E  M E A T L O A F

1 teaspoon chili powder
salt and pepper, to taste
1 pound extra-lean ground beef
4 ounces corn kernels, drained and chopped
1 medium onion, chopped
1/2 cup soft bread crumbs
2 eggs, slightly beaten
1/4 cup green pepper, chopped
1/3 cup barbecue sauce
Salsa

Preheat oven to 350.

Sprinkle chili powder, salt, and pepper over ground beef.  Add corn, onion, bread crumbs, eggs, bell pepper, and barbecue save, mixing thoroughly.  Using your hands, shape beef mixture into blobby loaf and place it on a rack in a shallow roasting pan (so it doesn’t swim in grease).  Bake for 1  1/2 hours or until cooked through.  Cut loaf into slices and spoon salsa over each serving.

NOTE* I used extra lean beef so I did the traditional method of baking in a loaf pan.  I let the children use their own topping; ketchup, BBQ sauce, or salsa.

W H I T E    T U R K E Y   C H I L I

1 T. olive oil
1 small onion, chopped (about 1/3 cup)
2 cloves of garlic, smashed and chopped up fine
1 lb ground turkey
salt and pepper to taste
1 can cannelloni beans, drained
1 can corn, drained
1 16 ounce jar salsa (your choice)
1 15 ounce can tomatoes with garlic and onion (or add extra seasonings if you only have plain)

In a skillet, heat olive oil over medium-high heat.  Add onion and garlic and cook until translucent, add turkey and brown, salting and peppering to taste.  Add the rest of the ingredients and heat till bubbly and completely heated through.

I triple this for my family, so we can enjoy leftovers.  I use mild salsa, the guys pass around the Franks Red Hot.

This recipe is from a cookbook that has literally changed my life, Saving Dinner, by Leanne Ely.  It contains recipes for delicious main dishes for each week (6 days) of the year WITH the complete shopping list (!!!!).  It is organized by season.  All the recipes are as healthy as can be with typically a fish, beef, chicken, slow cooker recipe, meatless, casserole.  Each recipe includes side dish recommendations and nutritional content.    I don’t use the cookbook every week, but I’ve used it a lot over the last couple of years, (all spring this year so far except the 2 flu weeks).   This week I am making Chicken Parmesan with steamed broccoli, Mexican Lasagna with a salad, Beef and Spinach Pitas with baby carrots, Chicken Broccoli Soup with a salad and rolls,  Halibut Piccata with steamed broccoli, sweet potatoes, and baked potatoes, and lastly, Greens and Beans with a side of brown rice.  Buy it!  🙂

Scandinavian Blondies

4 large eggs
2 cups sugar
1 teaspoon salt
2 teaspoon almond or lemon extract
1 cup unsalted butter, melted
2 cups unbleached all-purpose flour
1 cup sliced almonds (optional) (I used slivered because it was what I had)
Preheat the oven to 325.  Lightly grease a 9 by 13 pan.
In a medium-sized mixing bowl, beat the eggs well, until light colored and thick.
Add the sugar and salt, continuing to beat until shiny and pale yellow.
Add the extract, melted butter, and 1 cup flour, mixing it in gently.
Mix in the remaining 1 cup flour.

Pour batter into the prepared pan.  Sprinkle with the nuts.
Bake the bars for 30 to 35 minutes, until the edges are pulling away from the sides of the pan and they’re a very light gold color.  Remove from the oven and cool before cutting into squares.

Then, we went into the kitchen to cut into the cookies.  They had baked nicely into a soft, cake like bar, and the smell of almond was like aromatherapy. DSC_1538 Unfortunately Sarah wasn’t partial to them. DSC_1543 But her Dad and I liked them very much.  (the other children are at school, so I don’t know what they think of them quite yet) DSC_1549 I especially liked the almonds on top.  Because they weren’t mixed into the batter they stayed nice and crisp, as a nutty nut should be. Today I have a delicious recipe to share with you.  It is a cake that I began making many years ago, when I was a teenager.  I am forever grateful to my Mom for giving me free reign in the kitchen to learn to bake before I was married.  This recipe is special to me because everyone who tries it loves it.  It is a very simple, quiet cake to make by hand; no mixer is necessary.

The cake itself is an uncomplicated butter cake with a surprise thickened fruit filling in the middle.  The original recipe suggests raspberry filling, which is delicious, but I typically make it with strawberry, my favorite.

It is beautifully cream colored and golden, buttery, with a layer of pink, perfect for any time and perhaps Valentine’s Day, which is four days away.  Men love cake.  My dear husband Rich loves this cake, especially.  Your man might be similar to my man and prefer this cake over any other.   I am sure he would love this particular cake as an edible Valentine’s gift from his loving (and devoted) wife.  Maybe for dessert after a juicy steak dinner?

If your man does not like cake, might I suggest baking it for the children?

S T R A W B E R R Y   R I P P L E   T E A C A K E

1 10 oz package sweetened berries in juice (from the frozen section at the grocery store)
1 Tablespoon cornstarch or flour

For the Filling:  In a small saucepan, stir undrained fruit and cornstarch till combined.  Cook and stir until thick.  Remove from heat, set aside to cool.

For the Cake:
2 1/4 cups flour
3/4 cup sugar
3/4 cup salted butter or margarine
1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/8 tsp. salt
1 beaten egg
3/4 cup sour milk (1 T.vinegar, add milk to measure) OR buttermilk

Grease and flour a 10 by 12 round tart pan.  You may also use a round cake pan.

In a large bowl stir together flour and sugar, cut in butter.  Set aside 1/2 cup for topping.  Into remaining flour stir Baking Powder, Baking Soda, and Salt.  Make a well in center for combined egg and sour milk.  Stir until just moistened.  Spread 3/4 batter in bottom of pan.  Spread filling on top of batter, spoon on remaining batter and crumb topping.

Bake at 350 for 30-35 minutes.

This is what the unbaked cake looks like after dropping batter on top of the filling.  The cake will spread and come together when it bakes, so don’t worry about covering the filling entirely.

A Simply Lovely Life

It’s easy to be losing patience with the end of winter here in the North, where the ground is frozen and the snow is rock-hard.  The little ones are finding even more creative things to do around the house, for example, squirreling into the drop ceiling downstairs (!) like common mice.

The desire of my heart is to settle in, and content myself with my HOME, and what it means to me, to all of us, to be here day after day, my purpose, my life, my all, my joy.

Do not conform any longer to the pattern of this world, but be transformed by the renewing of your mind.  Romans 12:2

We are in the world, but not of it, because everything we do is sacred, with Jesus in our heart and soul.  It’s not about me, it’s about God.

Flipping pancakes with blueberries, serving them up with real butter and Grandpa’s maple syrup from New York (place of my childhood).

Listening to Seth say, “You should make pancakes on every tomorrow.”

Satisfaction in trying to make them the very best I can, even if one tears in half when I go to flip it.  The children love them, and the dog gets a leftover *if there are any*.

Thankful for the fresh eggs of our flock of hens, who are beginning to lay as they should (a sign of spring).  Brown and sage.

My Mom taught me to keep my roses even after they dried, to use in simple rose garlands.

It only takes about five minutes to snip the pretty flowers off their stems and string them on a piece of thread with a needle, for a garland.

Homekeeping can seem like such a solitary life but He is always with us.

And I will ask the Father, and he will give you another Counselor to be with you forever–the Spirit of truth.  The world cannot accept him, because it neither sees him nor knows him.  But you know him, for he lives with you and will be in you.

Snickerdoodles, a cookie I’ve made my whole life beginning with Aunt Colleen in Grandma’s kitchen, and just lately, in my own kitchen.

1 cup shortening
1 1/2 cups sugar
2 eggs
2 tsp. vanilla
2 tsp. cream of tarter
1 tsp. baking soda
1/4 tsp. salt

2 3/4 cups flour

mix in small bowl:

1/2 cup sugar
2 tsp. cinnamon

Preheat oven to 375.  Cream shortening, sugar, and eggs together till smooth.  Mix in dry ingredients.  From into 1 inch balls.  Dip into sugar/cinnamon mixture.  Place onto ungreased baking sheet 2 inches apart.  Bake for 8-10 minutes until edges are lightly browned.

Oh they are so good.  So good.

I used things from my own stash of pretty (scroll down if you click) and I love how it turned out.  All starting with a wire hanger, don’t you know.  LOL

These are the Chocolate Crinkle cookies I made yesterday for the children as they watched Frozen together on the couch.  The recipe is from The King Arthur Flour Cookie Companion cookbook that I got for my birthday.  They turned out great, in fact, there are only 2 left.

Last night we read about the Wanton woman, and Mr. Talkative.

We never heard about Mrs. Wanton in “Little Pilgrims Progress” so we were kinda like, bug eyed, but Rich said “Apparently someone in this room needs to hear this.”  All boys do, right?  Look out for Mrs. Wanton!  Don’t follow her enticing ways.

And Mr. Talkative does the talking but not the actual living a life of grace.  “I have heard that you are a man whose religion consists only in words and that your everyday life contradicts what you say.”  Oh, there is a lesson in that as well.

Seth’s hug that was more like a tackle around the legs.  (He almost took me down with it!)
Sunshine pouring through the windows as I type.
The beautiful mess of a busy household.
