how about some yummy cornmeal muffins?

These delicious muffins are made with honey and heavy cream.  The recipe also calls for vegetable oil, but you could use butter instead (like I did).    Yum.  We all liked them very much.

 Recipe here.

  1. Butter instead of corn oil? Always a better choice! And with honey and heavy cream—I’ll be right over : ). Hope you have a beautiful day in Connecticut.

  2. hi shanda…….these look great – i just printed out the recipe.  i made some muffins today too!  they are called “easy rolls” from one of paula deen’s cookbooks.  yes, we had the opportunity to travel to savannah a couple years ago and eat at her restaurant.  yum, yum, and yum!!  if you’re interested here’s the recipe.  and yes, they really are easy and super quick in a pinch when you’re looking for something to add to your dinner.
    EASY ROLLS
1 cup self-rising flour (OR just use regular flour plus 1 1/2 tsp baking powder + 1/2 tsp salt)
    1/2 cup milk
    1 tsp sugar
    2 Tbls mayonnaise
Preheat oven to 350 degrees.  Mix together flour and milk.  Add sugar and mayonnaise.  Roll into 6 balls and place in greased muffin pan.  Bake for 12-15 minutes or until golden brown.  Of course you will have to double the recipe!!
