easy muffins

 

 

Thanks so much for the nice notes left on my last post…I don’t say thank you enough for the gift of time, and thoughtfulness, of my xanga pals (or anyone who contacts me through this site)……so wonderful you are…..and kind.  I really appreciate it.

I recently found a new recipe for muffins.  My family loves muffins, they are a fast, easy snack or breakfast treat.  I’ve made this recipe twice now and they get eaten up in no time.  Of course, we have to double the recipe.  I buy bisquick from Costco so that’s okay.  I bet we could also make our own bisquick….does anyone know how?

I encourage anyone who knows how to read to try this delicious recipe, especially you children.  It would be such a nice surprise for your mom and dad.  Just be sure to clean up the kitchen when you are done.  If you do that, they will be surprised twice.

  1. Gack! I haven’t been here in ages and had to start reading all the way back to your vacation arrival! I’ll try your recipe. We also love muffins, and I’d never thought of making them for a snack. Rissy is becoming quite the cook (she’ll be 10 tomorrow) and she will probably want to try out the muffins with her own twist! Thanks (for your friendship and, well, just everything), Shanda, I’ve loved catching up, tonight! You make me smile! 🙂

  2. hi shanda…….so funny you brought up finding a homemade version of bisquick.  i recently thought about this too, and now you inspired me to FINALLY check it out!  whenvever i’m looking for something, i try allrecipes.com or google it.  i checked out the link from mrs. le fevour, and it’s the same one as on allrecipes (although she used butter and the other uses shortening) that got some awesome reviews.  she just cut the recipe in half, so with your big family, you may want to double hers!  i’m definitely trying this out!
    by the way, i never got a chance to comment on your last post, which i loved (as usual).  i agree with everyone and hope you never stop blogging.  as i always say, yours is my favorite.  you show the beauty and love found in ordinary life, which is so inspiring.  oh, and i noticed the bona floor cleaner on your counter by the sink where your cuties were taking a bath.  we live in an older home with all hardwood floors and that’s what i use, too!

I have a Biscuit Mix I have used in the past but don’t bake enough any more to keep it on hand.  It has a number of uses listed for it also.  It is in one of my very favorite cookbooks – “Mennonite Country-Style Recipes” by Esther H. Shank.  It’s a great cookbook for new brides as it has so many helpful things in it like “how to” kinds of things, ways to use left-overs, etc. as well as recipes using common ingredients one usually has on hand…and tasty stuff!!
