Baked Oatmeal
A recipe from Amish country in
Lancaster county, PA
(from a bed and breakfast we stayed in
which is owned by an Amish couple)
1/4 cup butter, melted
1/2 cup brown sugar
1 egg
1 1/2 cups old fashioned oats
1 tsp. baking powder
1/2 tsp. salt
1/2 cup milk
Mix all together in a loaf pan.
Bake at 350 for about 30 minutes.
This is a recipe that I make for Rich and myself. If the kids happen to want some than that’s great. If not, there’s more for me!
I would eat this with a side of fresh fruit and a glass of cold milk.
The original recipe is doubled and baked in a 9 by 13.
One of my favorite xanga sites, which belongs to my cousin Elisha:

Pray for me today. I have had 2 nights of wakeful hours. Added to the fact that yesterday was so busy means that this morning I feel quite . . .drained.
Verse to share: “As a father pitieth his children, so the Lord pitieth them that fear Him. He remembereth that we are dust.” Psalm 103
Comforting verse!

The oatmeal sounds yummy! I have 2 different baked oatmeal recipes I want to try. Actually, I guess now I have three! 😉 I find that lately with my picky toddler, I cook food for three but it ends up getting eaten by only two! LOL. Praying for strength and rest for you today: I can relate to sleepness nights. Thanks for sharing that encouraging verse, and I hope you enjoyed your day yesterday! 🙂 Love, Heather
I will definitely have to try that recipe! That sounds scrumptious! I hope you get your much needed rest today! Have a great day! Love, Lish
Shanda I am so sorry about your nights, it is very difficult to function when ytou have had so little sleep, wish I could come over to help and send you to bed with some of that good lookin’ oatmeal!
Yummy, the oatmeal sounds so good. Hope you have a peaceful/relaxing day, I am praying for you
I love oatmeal, so I will certainly give this recipe a try. Thanks!
yum!
Loved your cousin’s site ~ thanks for sharing it. That verse from Psalm 103 has been a comfort to me many times ~ a verse I cling to from time to time. May the Lord grant you some sweet rest soon.
The oatmeal looks wonderful. I’m up so much at night that it’s become normal to me, we should write back and forth or something, take advantage of the time 🙂 Kidding. I hope you have a restful day.
I’m glad you had a wonderful day yesterday and I hope the children are letting you get a little rest today.
Will absolutely be trying this recipe. Thanks for sharing it.
I wonder if the Amish work so hard they burn off all the cholesterol etc. in their recipes… which always look sooo good!
Thanks Shanda for the recipe, looks so good and sounds good to me right now. Don’t you just love B&B’s? I simply love them. There’s a wonderful small town south of where I live with some B&B’s. I would love to go stay with Glenn sometime soon. Hope and pray you sleep soundly tonight. Love, Tara

What B&B did you stay at? We visit lancaster often but have never stayed overnight–that would be fun to do!
I made the oatmeal this morning! While it looked nothing like your picture, it was soooo yummy!!!
